Ah, zucchini. We returned from vacation to an abundance of not only zucchini, but giant zucchini, left to grow wild. The garden itself looks like a jungle, but the zucchini are out of control. One weighed in at over seven pounds. So, what is one to do with this ginormous vegetable?!? After giving a longing glance at the compost pile- seriously, what can I do with THREE of these?!? - I resigned myself to grating and baking...
Of course, the compost pile was looking better and better when I realized my food processor was not only 'sick', but truly broken...so this soon took on a 'labor of love' vibe as I quartered, seeded, and then grated these giants. This recipe takes three cups of zucchini; that's about one medium, or a third of the giant ones.
Chocolate Chip Zucchini Bread
Makes 2 loaves
Gluten Free
Corn Free
Allergen Free for: Egg, Soy, Nut, Peanut, Wheat, Shellfish, Fish
Contains Dairy- source: yogurt for: moisture and crumb
possible dairy substitutions: banana, applesauce, crushed pineapple (drained)
If using your own flour blend: Flour = 420 grams = 3 cups
Flour Blend
150 grams white rice flour
90 grams potato starch
78 grams brown rice flour
72 grams sorghum flour
30 grams buckwheat flour (can substitute more sorghum)
Dry Ingredients (add to flour blend)
1 Tbsp. arrowroot starch
3 Tbsp. ground flax meal
1 tsp. salt
1 1/4 tsp. baking soda
1/2 tsp. cream of tartar
2 tsp. cinnamon
Wet ingredients
In a large bowl, blend together:
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup coconut oil (melted)
1 flax egg (1 Tbsp. ground flax meal + 3 Tbsp. water)
1/2 cup Greek yogurt
2 tsp. vanilla
Add Dry ingredients to wet ingredients and mix to moistened
Mix in 3 cups grated zucchini
Add ins:
This is where I added 1 cup chocolate chips and 1 cup toasted coconut. If you are able, you could add nuts, maybe walnuts, or even sunflower seeds!
Pour into 2 well greased loaf pans
Bake at 325 degrees for 1 hour or until toothpick comes out clean.
Remove from pan immediately and cool on a wire rack completely before cutting.
