Gluten Free Chocolate Zucchini Cake

Ingredients
1 Cup Grated Zucchini
2 TBSP Cocoa powder
75 grams Authentic Foods SuperFine White Rice Flour
30 grams Potato Starch
45 grams Authentic Foods SuperFine Brown Rice Flour
25 grams Sorghum Flour
1 1/2 TBSP Ground Flaxseed
1 1/2 TBSP Ground Flaxseed
1/2 tsp Allspice
1/2 tsp Cinnamon
1/4 tsp salt
1 1/4 tsp Baking Soda
1 tsp Cream of Tartar
1/4 cup butter
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 flax egg
1 tsp Vanilla
1/4 cup greek yogurt
Directions
Grease & Flour 9x9 square baking dish
Grate 1 Cup Zucchini
Preheat Oven to 350o F
In a small mixing bowl, blend together all dry ingredients
In a large mixing bowl cream butter & sugars
Beat in flax egg and vanilla until fluffy
Mix in Greek Yogurt
Add in dry ingredients and blend with butter/sugar mixture
stir in grated zucchini until just combined
Pour into baking dish
Bake at 350o F for 40 minutes or until toothpick comes out clean
Zucchini, Zucchini, Zucchini...I don't know about you, but I know my kids are tired of seeing these green things in the kitchen. When you ask Lena how she likes her zucchini the answer has always been, and most likely will always be, in Chocolate Zucchini Cake! Forget grilling, steaming, or sauteing, she just goes straight for the chocolate. Although she picks at the zucchini in its purest form, she also has no idea how much she is eating where I quietly 'sneak' it in. In this cake though, there is no picking around the green flecks, it just all goes right down!. This has been a family recipe since I was a kid. It was always best with a dollop of whipped cream adorning the top...ah, heaven.
The challenge for this heaven was a gluten cake made with eggs, yogurt, lots of sugar, and plenty of oil. No wonder it was so good! I assure you, the new version can compete. Even Lena agrees.
