Wafflicious Waffles Gluten Free Egg Free Yeast Free Dairy Free Option



If you are gluten free and you are not making waffles, then you are not living gluten free..you are just existing.  I have often said that before my diet changed I lived to eat, I didn't eat to live. My food choices have changed, but I still strive to live to eat. Waffles are a pillar of that challenge, and sunshine, they aren't just for breakfast anymore.


I always make a large batch of these and freeze them.  

Then I can pull them out for breakfast with syrup or just butter and jam like toast...

or I can pull them out for lunch, pop them in the toaster oven and slather them with my favorite 
nut (or nut free) butter...


or I can pull them out for a quick dinner-topped with fresh tomato, crushed garlic, basil and fresh mozzarella...


or I can pull them out for a late night snack...and...well you get the picture...and if you don't scroll back up to the top and meet me back here when you stop drooling.



This recipe was one of my first to go gluten free...which seems odd because although we had a waffle maker, I seldom used it.  How much did I dread dragging that thing out and then trying to clean it....it was always the clean up that got me.  Then came along my good friend who, upon trying to use my waffle maker to make waffles for 6 giggling girls (yes 6), two hungry husbands, and both of us, immediately took me to Macy's to buy a 'proper' waffle maker.  I was skeptical...and now I am a believer.  This thing is the holy grail of waffle makers, and cleanup...what cleanup!

Being my first, it will make many of you sing and dance, I actually (shh...don't tell) use a flour mix.  I am telling you, these waffles are so good...I am not even going to try to change this one.  Besides, I like that the bean flours...yes, bean flours, give these a boost of protein, fiber, and iron. 

So, heat up that waffle maker and let's make waffles!



Gluten Free Allergy Free Wafflicious Waffles

In my waffle maker this makes about 6 7-inch round waffles; I have doubled and tripled this recipe without incident


Gluten Free
Corn Free
Allergen Free for: Egg, Soy, Nut, Peanut, Wheat, Shellfish, Fish

May Contain Dairy- sourcemilk  for: texture; liquid
possible dairy substitutions: any non-dairy milk substitute (these have been successful with both rice and almond milk)



1 Cup Bob's Red Mill All Purpose Baking Mix
3 TBSP Tapioca Flour or Potato Starch
3/4 tsp. baking soda
1 tsp. Cream of Tartar

1 flax egg (1 TBSP ground flax + 3 TBSP water)
1/4 cup olive or grapeseed oil
1 short cup of milk (this would be about 7/8 cup or 7 ounces)

Blend dry ingredients together.  Add wet ingredients and mix to incorporate. Add any Add-Ins (see below).

Pour scant 2/3 cup batter (or follow your waffle maker directions) onto the center of the hot waffle iron.  Don't overfill these, they are best with just enough batter to make the full size waffle.  Too full and you run the risk of being undercooked or too thick and heavy. I need to turn my waffle iron all the way up for these, and sometimes let them go a bit longer than the light indicator...it depends on how crispy you like them, but the bean batter is not good if it is under cooked.

If you are eating these as you make them, serve immediately...especially if you are serving 6 giggling girls.

Alternately you can keep them warm in a single layer directly on the oven rack at your lowest temperature setting. Don't stack them...they will get soggy!

If you are just making these to throw in the freezer for later, I place them on cooling racks in a single layer to cool and then throw them in gallon size ziplock bags. Don't stack them...they will get soggy!

Out of the freezer I pop them in the toaster oven on 'toast' for 3-5 minutes depending on whether they are naked or sporting toppings.  Pizza toppings require longer at 350 degrees in the toaster oven.

Add-In Options:
add 1-2 tsp. cinnamon for breakfast or sweet waffles
add mini chocolate chips to the batter for a special occassion...like Tuesday
add blueberries and cinnamon for awesome blueberry waffles
add crushed fresh garlic and italian seasonings for 'pizza' waffles

Topping Ideas:
Butter and your favorite jam
maple syrup or maple cream...mmmm!
your favorite nut or nut-free butter
Melt your favorite cheese on top
top with fresh tomato, garlic, basil, and mozzarella cheese for pizza waffles
(sliced tomato is best with these as pizza sauce makes the waffle soggy and beany)
Caramel or chocolate sauce and ice cream
