Pizza Dough

Ingredients
60 grams White Rice Flour
60 Grams Brown Rice Flour
20 Grams Tapioca Flour
1 TBSP Ground Flaxseed
1 tsp Baking Soda
1 1/2 tsp Cream of Tartar
1/2 tsp Salt
1 cup Greek Yogurt
More Tapioca for kneading
Directions
Preheat
oven to 400o F
Mix
together dry ingredients.
Mix
in Greek Yogurt until moistened.
Dough
will be very wet. Dump onto surface floured with tapioca flour.
Knead in 1/4 - 1/2 cup at a time
until dough is no longer too sticky.
Dump
dough onto greased AND floured metal pizza pan.
Roll
out dough evenly.
Bake
10 minutes.
Remove, top pizza, and return to oven.
This pizza can take everything from traditional sauce and cheese to an artisan pizza with sliced tomatoes, loads of veggies, and a variety of different cheeses.
I usually use the broiler to finish it off.
Bake 10-15 minutes until done.
