Chocolate Glaze or Frosting Allergy Free, Corn Free, Dairy Free

So this recipe makes either a chocolate glaze, that you can spoon or pour over your cake, or a nice light whipped chocolate frosting.  The only difference is in the way you finish it.

I really like that this frosting is not made with confectionery sugar.  It has really been a blessing when I can't find that corn free confectionery sugar.  It is also so versatile with the options of both a frosting or a glaze.  If you are familiar with ganache, this is a spin off of it, but instead of using cream this recipe uses sweetened condensed milk.  In the dairy free version that would be my sweetened condensed coconut milk.  The glaze will harden when chilled and looks beautifully smooth over your cake.  The frosting is light and fluffy to rival any buttercream.  The choice is up to you!

Here's the recipe.  This makes enough to frost one 8 x 8 cake, one 8 or 9 inch round, or 12 cupcakes.  It can easily be doubled.

Chocolate Glaze or Frosting



Gluten Free
Corn Free
Allergen Free for: Dairy, Egg, Soy, Nut, Peanut, Wheat, Shellfish, Fish

Makes enough to frost one 9 x 13 cake, a 2-layer 8 or 9 inch round, or 12 cupcakes

14 oz. sweetened condensed coconut milk

2 ounces unsweetened bakers chocolate

1 tsp vanilla

For Base

cut or break unsweetened chocolate into small pieces

Heat sweetened condensed coconut milk with
 unsweetened chocolate in a saucepan over moderate heat stirring often until chocolate melts

(or heat in microwave at 50% in one minute increments, stirring often until chocolate melts)

 Be careful not to scald!

stir in vanilla

For Glaze

Add 1-3 tsp water until thin enough to lightly coat the back of a spoon

Pour hot glaze over cake and chill in fridge

For Frosting

chill base 30 minutes to 1 hour

with hand mixer beat at medium speed until color lightens and frosting appears fluffy

add 1 - 3 tsp water and continue mixing until desired consistency
