Chocolate Frosting II

Chocolate cake must always come with chocolate frosting...well, most always-German Chocolate Cake may be and exception!  Still there can never be too many chocolate frosting recipes and this is one of my favorites! (and no sweetened condensed milk required!)

This is a rich, dark chocolate frosting with just the right balalnce of bitter dark chocolate and sweetness to compliment my Chocolate Birthday Cake!

Chocolate Frosting II

Gluten Free
Corn Free
Allergen Free for: Dairy, Egg, Soy, Nut, Peanut, Wheat, Shellfish, Fish

Makes enough to frost 1-  8 x 8 or 1- 8 or 9 inch round or 12 cupcakes

Ingredients:

1/4 cup dairy free butter/palm-coconut shortening
1tsp vanilla
2 oz. Baker's unsweetened chocolate
1 cup corn free powdered sugar
2-3 TBSP dairy free milk or water

Instructions:

Melt unsweetened chocolate in microwave on high for 1 minute
Stir and return to the microwave for 30 second increments stirring and checking until melted
Set aside to cool

In medium bowl whip dairy free butter until soft and smooth
beat in vanilla
add 1/2 powdered sugar and blend
add half melted chocolate and blend on medium speed
blend in remaining powdered sugar
and the remaining melted chocolate

add dairy free milk 1 TBSP at a time to desired consistency
