Many recipes call for sweetened coconut, but I can't buy the already sweetened coconut because it contains preservatives that bother me. I also find the prepackaged stuff to be way too sweet. So, if you want to cut back on the sugar, avoid the preservatives, or you just don't have the sweetened coconut on hand here is a super simple, quick and easy way to sweeten your unsweetened coconut.
Sweetened Coconut
Gluten Free
Corn Free
Allergen Free for: Dairy, Egg, Soy, Nut, Peanut, Wheat, Shellfish, Fish
Ingredients:
1 cup unsweetened coconut
for lightly sweetened:
4TBSP water + 4tsp sugar
for sweetness like the prepackaged coconut:
4TBSP water + 8tsp sugar
heat water and sugar in small saucepan until sugar dissolves
add unsweetened coconut and stir until all water is absorbed
remeasure 1 cup sweetened coconut-remainder can be stored in the freezer or toasted
